When I hear "Three King's Day", which is tomorrow, or "recipes for 12 Days of Christmas", which we have been doing all along, the number one thing that comes to mind is Rosca de Reyes, or Three Kings Bread. Yes, it's true: I have saved the best for last and today's delicious recipe is for this traditional bread, typically eaten today, the 12th day of Christmas, and tomorrow, Epiphany or Three King's Day. If there's just one recipe that you want to enjoy out of our series, then THIS is it.

This delicious cake (or bread) is what we Latinos eat to celebrate the arrival of the Three Wise Men and the revelation of Jesus as God the Son. Whether you're religious or not, though, anyone would be proud to enjoy the ending of the feast with this great dessert.

There are several different ways and recipes vary from country to country, but typically the cake is decorated with fig fruit, quinces, cherries, and fruit that is dried or candied. You can use dried or candied cherries, cranberries, pineapple, mango. Really, anything works.

The other tradition associated with Rosca de Reyes is to place a small trinkey (typically a little figurine of the Christ Child) and whoever finds it will be blessed and must take it to a church on February 2nd, Candlemas Day. Now, get to baking and celebrate!
