This perfect summer eggplant and tomato casserole is a cousin of the French ratatouille. Anchovies provide a special touch. It can be served hot, warm or cold, as an appetizer or as a side dish. Today's recipe is grilled salmon with a crust made of island spices and thyme. A fish rich in omega-3, salmon is good to lower cholesterol and triglycerides. The classic key lime pie as we know it in Florida, doesn't come with cream or meringue, or almonds or anything other than eggs, condensed milk and juice and zest of the limes produced in the sunny South Florida Keys.
